The Canadian Grain Commission says it is working with the University of Manitoba to study how moisture levels affect the quality of beans in storage. The CGC recommends that edible beans be stored at a moisture level of 18 per cent in order to maintain quality.

The CGC said the results will be presented to the Eastern Standards Committee, and if sufficient scientific evidence exists, the committee could make a recommendation on moisture levels for stored beans at its spring 2012 meeting.

"Before new guidelines are recommended to producers, the Eastern Standards Committee makes sure its decision is based in solid research,"  Elwin Hermanson, chair of the Eastern Standards Committee and chief commissioner of the Canadian Grain Commission said in a release.
